Bocconcini/Mozzarella salad
Slice both the tomatoes and bocconcini balls in half and add to a bowl
Add fresh basil leaves and fresh mint leaves to the same bowl and toss
lightly to combine.
Add olive oil, lemon juice, and salt & pepper to taste – serve
immediately.
Skewer (wooden stick) cherry
tomato first then a folded basil leaf then a bocconcini ball/ cut
mozzarella cheese, followed by another folded basil leaf and a final
cherry tomato.Lie skewers flat on a long dish.Drizzle a zig zag of
balsamic vinegar and olive oil glaze down the centre of the skewers and
serve.
Assemble cut the cherry tomatoes on a plate. Sprinkle chopped basil
into imperfect pieces over the tomatoes. Chop or tear the burrata into
bite-sized chunks. Put a few cracks of salt and pepper on top, followed
by a drizzling of olive oil and balsamic vinegar.

Simply slice the watermelon, feta, and skewer them along with a baby
mint leaf. You can certainly drizzle with balsamic or olive oil or just
keep it simple with a pinch of RRO Italian seasoning.
Place grilled bread on a flat surface. Evenly divide and spread ricotta
on each piece of bread. Top with pistachios and drizzle with honey.
Finish with a pinch of salt and lemon zest.
